Special Rum Cake
¼ cup milk
½ cup butter or margarine ¼ cup molasses
1 cup sugar ¼ tsp baking soda
3 eggs beaten 2 cups nuts, chopped
1 cup flour ¼ cup rum
½ tsp baking powder ½ tsp ground nutmeg
¼ tsp salt ½ tsp ground cinnamon
1 lb seedless raisins,
(soaked overnight in Mount Gay rum)
Cream the butter and sugar, then add eggs followed by the
dry ingredients
Next, add the milk, put baking soda with molasses and
pour in. Mix in the raisins, nuts, and rum. Pour all into
a greased and floured loaf pan. Bake at 300°F for about
2 hours. This will keep indefinitely in the
refridgerator, wrapped in foil. More rum may be added
from time to time, by making incisions in the cake.
