Recipe Baked Breast of Chicken 3 whole chicken breasts ½ lb mushrooms, chopped 2 tbsp flour ½ cup shelled green peas 2 tsp salt 1 stalk celery ½ tsp freshly ground black pepper 2 sprigs parsley 2 tbsp butter or margarine 1 bay leaf 1 clove garlic, minced 1 cup dry white wine ¼ diced ham 1 head lettuce, cut in 6 wedges Cut the breasts in half through the breast bone. Mix the flour, salt and pepper. Rub the chicken with the seasoned flour. Melt the butter in a casserole; add the chicken breasts and garlic. Brown lightly on both sides. Cove the chicken breasts with the ham, mushrooms, and peas. Add the celery, parsley, bay leaf and wine to the casserole and place the lettuce wedges over all. Bake in a 350°F oven for 1 hour or until chicken is tender. |
