Recipe Lamb Pilau 6 shoulder lamb chops 2 stalks celery, sliced 2 onions, chopped 3 cups boiling water 2 tsp salt ¾ cup uncooked rice ½ tsp pepper ¼ lb mushrooms, chopped 1 bay leaf 2 carrots, sliced 1 egg yolk, beaten Trim as much fat as possible for the chops. Brown on both sides in a skillet Pour off the fat. Add the onions and continue browning. Add the salt, pepper, bay leaf, carrots, celery, and 1 ½ cups boiling water. Cover and cook over low heat for 40 minutes. While the lamb is cooking, prepare the rice. Add the rice and mushrooms to the remaining boiling water. Cover and cook over low hear for 20 minutes. Place in a casserole dish and add the sauce and the vegetables for the lamb. Stir in the egg yolk and taste for seasoning Arrange the chops on top. Bake in the 375°oven for 10 minutes. Serve directly from the casserole 1 tbsp cooking oil 1 medium onion, chopped 1 tsp ginger 1 tsp garlic powder 1 tsp curry powder 1 lb ground beef 1 tomato, chopped (optional) ¾ cup cooked peas, frozen or fresh 1 pkg. Egg roll wrappers fat for deep frying Put oil and onion into frying pan. Fry until browned. Add ginger, garlic powder and curry powder. Cook and stir for about 2 minutes. Add ground beef and tomato and scramble-fry. Stir in peas. Allow cooking. Cut egg roll wrappers diagonally into 4 triangles. Put about 1 tbsp of mixture in center. Moisten edges with water. Fold over and press to seal. Fry in 375°F fat until golden brown, turning once. To reheat, place on baking sheet in 350°F oven for 10 to 15 minutes. Makes about 5 dozen. Note: Wonton skins may be used. They are a bit thinner. May be baked in 450°F oven for about 10 minutes. They dont get as bubbly- brown in the oven as when deep-fried. |
